Linda’s Spicy Chipotle Turkey Chili

Who doesn’t love a quick, easy, low-fat, high-protein, nutritious meal on a “chilly” day? Here’s how to make my Spicy Chipotle Turkey Chili!! 🍲

Main Ingredients

  • 1 pound lean ground turkey
  • 1 red pepper, chopped into quarter-inch pieces
  • 1 small can of Mexican corn, drained
  • 1 can of dark red kidney beans, drained
  • 1/3 small can of Chipotle peppers, chopped (or less if you don’t like it too spicy!)
  • 2 cloves of garlic, chopped into small pieces
  • Your favorite tomato sauce. I tried a spicy honey tomato sauce that worked nicely.
  • Chicken broth

Spices

  • Pepper
  • Cumin
  • Turmeric
  • Smoked paprika
  • Cilantro, if desired. You can add it dried while cooking or put some fresh cilantro on top when the chili is ready.

Toppings

  • Shredded cheddar or Mexican cheese blend
  • 1 avocado, cut into chunks or slices
  • Low-fat sour cream

Instructions

Spray the frying pan with avocado or olive oil to prevent sticking, and cook the turkey meat, breaking it up into small bits with as it cooks. Add some salt and pepper as it nears completion.

Add the red pepper and sauté, followed by the garlic, being carefully not to burn them.

Once the red pepper and garlic are softened, add the chopped chipotle peppers and some of the sauce, and cook another minute or so.

Next, add the corn, beans, about 1/2 cup of tomato sauce and about 1/2 cup of chicken broth. Simmer until the sauce is the consistency you like, and you are ready to eat.

Serve in a bowl topped with shredded cheese, a healthy serving of avocado, and sour cream, and your favorite chips or cornbread. Enjoy!!

Naughty or Nice? This Snickerdoodle Recipe is Nice!

Did you ever think that grain-free, lectin-free/gluten-free, and nearly sugar-free (don’t tell your guests!) cookies could taste like cinnamon donuts?

Well these Snickerdoodles do just that! To put icing on the cake, so to speak, this recipe is super easy too. The most time consuming part is simply putting the cookie dough on the baking sheet.

Full disclosure: To give them a festive look for the holidays, I did roll them in gold sugar sprinkles along with the cinnamon. The photo also shows some green sprinkles, but I recommend using only the gold ones, if any. Another note, is that you can also substitute the butter for clarified butter, known as ghee, and some coconut oil. Ghee has had the lactose removed, and some brands are from grass-fed cows.
